     Recipes for July 2010 

 

Seasonal Favorites:  Just the other day I was remarking to my assistant that this is the best time of year.  The markets are overflowing with a multitude of local, in season, fruits and vegetables. One of summer's greatest gifts has to be fresh peaches with their suede-like skins in brilliant colors of blush pink, crimson, magenta, and amber. SOUTHERN PEACH PIE IN NUTTY CORNMEAL CRUST highlights this succulent fruit. While peaches make luscious pies, the abundant juices that they exude when baked make homemade peach pies a nemesis to the pie baker.  To overcome this, I like to par-cook the peach filling.  This way, I can remove the excess liquid before I empty the fruit into the pie plate.  BRANDIED PEACH TOPPING will brighten any summer meal on sultry hot days. This recipe makes a wonderful dessert topping that can be used for shortcake with ice cream, or to spoon over a slice of pound cake.  Delicious!  Let’s not forget a peachy treat for all you muffin lovers.  CRUMB-TOPPED WHOLE WHEAT PEACH MUFFINS are made with whole-wheat flour, which provides a nutty background flavor for the sweetness of the fruit.  A crunchy streusel made with oatmeal and brown sugar, along with whole-wheat flour is the perfect compliment.  Because of the moistness of the peaches, theses muffins are best eaten the day they are baked.

Holiday Features:  July 4th, the birthday of the United States of America, is typically celebrated with parades, fireworks, ceremonies, barbecues and family gatherings.  Let’s celebrate this holiday by making some of my all-time great American classics, but with a twist!  CHOCOLATE CHOCOLATE CHIP COOKIES combines the best of both worlds.  These chewy cookies have a full-bodied chocolate flavor and a deep chocolate color.  For this dough, I like to use high-quality imported chocolate, such as Lindt Bittersweet or Perugina.  Since brownies and cheesecakes are among our most favorite desserts, how about marrying the two of them together in CHOCOLATE CREAM CHEESE BROWNIES.  Here the dark chocolate batter is marbled with swirls of velvety cream cheese.  For a contrast of texture, I added some toasted walnuts.  When you marble the two batters together, be sure to keep your knife in the upper portion of the batters and do not overmix or the marble effect will be lost.  BLUEBERRY CORN MUFFINS is my twist on a classic corn muffin. I can’t think of a nicer treat for Sunday brunch than serving warm corn muffins filled with blueberries.  Because blueberries are so plump, along with the whole berries, I like to chop some of the berries just enough to break them up before adding them to the batter.  This way I can incorporate more berries in the batter.
