     Recipes for August 2008 

 

Seasonal Favorites:  August is here and it’s my time to sit back and relax, enjoy the abundance of summer produce and spend some time with family and friends.   Local Jersey peaches are at their prime and I can think of no better way to enjoy them then by baking a batch of CRUMB TOPPED WHOLE WHEAT PEACH MUFFINS. The muffins are made with whole-wheat flour, which provides a nutty background flavor for the sweetness of the fruit.  The crunchy streusel topping, full of oatmeal, brown sugar, and whole-wheat flour, is the perfect complement.  MANGO TART WITH BLUEBERRIES features tangy blackberries sprinkled on a buttery tart pastry then topped with slices of sweet mango.  The pairing of fruits is not only a dynamite flavor combination, but when sliced, the contrasting shades of apricot colored mangos and deep purple blackberries make this tart an eye appealing beauty.   If you are looking for a sweet biscuit to use for traditional strawberry shortcake, I suggest you try NAUGHTY SWEET CREAM BISCUITS.  Here sweet biscuit dough is enriched with butter and bound with heavy cream.  After baking, split the biscuits in half and fill the bottom with juicy macerated berries and a spoonful of whipped cream.  Cover with the top of the biscuit and finish it off with more whipped cream!  Isn’t it fun to be “naughty” sometimes!

Holiday Features:  Just because there are no “official” holidays in August doesn’t mean we can’t bake treats for our special friends and family.  Pound cake is a treat that is enjoyed by children and adults alike.  Take advantage of the fruits of summer by trying my FRESH FRUIT POUND CAKE.  This pound cake has a rich buttery flavor enhanced with flecks of grated orange zest.  It can be made with a wide variety of fruit such as, blueberries, raspberries, pitted cherries, peaches, or nectarines, alone or in combination.  If you know someone who loves chocolate cookies made without nuts then JEFFREY’S CHOCOLATE SUGARSNAPS are just for them.  These dark chocolate cookies with a sugary top are best when made with high-quality chocolate.  If you like your cookies chewy then bake the cookies for 8 to 9 minutes.  If you prefer crunchy cookies then bake them for 10 to11 minutes.  TOFFEE NUT SQUARES are similar to Blondies except they are thinner and made only with brown sugar. It is essential that the brown sugar be very fresh, so be sure to open a new box.  The light brown sugar produces a wonderful caramel flavor that complements the taste of the butter.   This is a wonderful cookie for children and adults alike.
