    CHEWY TOFFEE NUT SQUARES

    Makes 4 dozen

    Ingredients:

    2 cups sifted all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    2/3 cup unsalted butter, at room temperature
    2 cups light brown sugar, lightly packed
    2 large eggs
    2 teaspoons vanilla extract
    1 cup + 2 tablespoons medium-chopped walnuts
    1 cup semisweet chocolate bits


    Procedure:

    Preheat the oven to 350 degrees. Butter well a 10 x 15 x 1-inch jellyroll pan.

    Sift the flour, baking soda, and salt together.

    In an electric mixer, cream butter until smooth, then gradually add brown sugar, beating until well blended and light in color. Beat in eggs,1at a time, then the vanilla. On low speed, add dry ingredients, mixing JUST to blend. Stir in 1cup of the nuts and chocolate chips.

    Spread batter in jellyroll pan, sprinkle remaining 2 tablespoons nuts over the top. Bake for 16 to 18 minutes until sides are lightly brown, but center is still soft. DO NOT OVER BAKE. When cool, cut into squares.
