CREAM CHEESE PASTRY

 

Ingredients:

1 cup unsalted butter, room temperature

8 ounces cream cheese, room temperature

2 cups unsifted, unbleached all-purpose flour

1/4 teaspoon salt

 

Procedure:

In a large bowl, using a wooden spoon, cream together the butter and cream cheese.

 

Add 1 cup of the flour, and blend into the butter/cream cheese mixture with the wooden spoon.  Add the remaining flour.  Cut the flour in with the spoon, working it only until the flour is incorporated.  Then, using your hands, knead the mixture briefly, and then form a ball.  DO NOT OVERWORK.

 

With lightly floured hands, divide the dough in half and form two disks.  Dust disks lightly with flour, score with the side of your hand, and cover with plastic wrap.  Chill for at least 4 hours.  Let dough stand at room temperature for 1/2 hour before rolling.
