WARM FUDGE SAUCE Makes 1 1/2 cups
Ingredients: 4 ounces bittersweet chocolate, coarsely chopped 1 ounce unsweetened chocolate, coarsely chopped 3/4 cup heavy cream 1/2 cup sugar 1/4 cup light corn syrup 2 tablespoons unsalted butter 1 teaspoon espresso powder (optional) 1 1/2 teaspoons vanilla extract
Procedure: Place all the ingredients in a medium, heavy saucepan. Over low heat, bring to a boil. Reduce heat and simmer for 8 to 10 minutes or until the sauce has thickened and is smooth and shiny. This sauce will thicken further as it cools.
STORAGE: Store in the refrigerator in a tightly sealed glass jar. This sauce will keep for 4 to 6 weeks. Reheat before serving.
